Nostalgia, presentation, portability, and neatness. It’s easy to see why the latest trend in restaurant serveware centers on pieces that fit neatly in your hands. Bowls and jars are being used by chefs and restaurateurs in exciting new ways – and customers everywhere are getting in line.
With more health-conscious diners looking for meals featuring whole grains and vegetables, bowls have become the top choice for easy presentation and practicality. Bowls keep everything in place with little mess. The bowl trend may have started with the popularity of acai and yogurt bowls, yet bowls have long taken center stage in Asian and other global fare, like Korean bibimbap, ramen, and now poke.
International hotel and restaurant consultants Baum and Whiteman released a report claiming bowls would be one of the hottest trends in 2017. So did the website FoodBeast. But it’s not just foodies who are taking notice. In 2016, Business Insider reported entree bowls in restaurants rose nearly 30% over five years, and even The Wall Street Journal declared in a headline: “Bowls are the New Plates.”
In 2017, look forward to new bowl breakout stars, like hearty breakfast/brunch bowls, or even the use of French fries or other starches as the base for creative toppings and sauces.

Handheld dessert craze is over-the-top, mega-milkshakes that require a handle for extra grip and balance. Usually served in see-through glass jars, these wild and wacky shakes get topped with brownies, cookies, donuts, sprinkles, lollipops, and even cotton candy.
Black Tap Burger Bar in New York City nearly broke the internet when it introduced mile-high milkshakes. Not to be outdone, Molly Bakes in London serves shakes in large handled glass Mason-type jars piled with cookies, caramel, chocolate and raspberry sauces, marshmallows, and more. Little Goat Diner in Chicago even debuted a sweet-and-savory shake with smoked pork and toffee! Talk about shaking things up.

Fresh Take on Jars
The jar trend is not just for super-shakes. Serving food in jars is nostalgic. It gives diners a sense that food is homemade. It’s tactile; food can be picked up and brought closer.
Some new restaurants only serve food in jars, like Ancolie near NYU’s campus in Manhattan. Ancolie diners who bring back 10 jars to the restaurant get a free meal. In the Chicago suburbs, a former Oprah Winfrey producer opened a healthy restaurant named for its use of the glass vessels: Jar Bar.
And then there’s GT Fish & Oyster in Chicago, where they serve New England clam chowder, Key lime pie, and a gin-based herbal cocktail all in jars for a triple threat -- or treat, depending on whether you’re a competitor or a patron.
What’s clear is that this craze of bowls and jars is a trend buyers should grab onto.

We have partnered with New York City based ceramic designer, Jono Pandolfi, to develop a new stoneware collection under the Chef & Sommelier® brand.

Jono Pandolfi started his ceramic dinnerware business 10 years ago from a small studio in Union City, New Jersey overlooking the stunning views of the New York City skyline. Pandolfi is well-recognized in the design and culinary communities for his high profile collections with notable chefs; especially in the trendsetting capital of New York City.
“My strength is that I listen to chefs and find out what they think is cool and awesome” states Pandolfi. “I like to think about a design like it is a recipe. I use the best materials available, practice it over and over, and eventually you get it right. That is what we have done with this new Geode collection for Chef & Sommelier®.”
We are launching the Geode collection at the 2016 National Restaurant Association show in Chicago. Geode is a stoneware collection that features seven pieces including two bowls, three plates, a ramekin, and a mug.
“My overall guiding principle was to design a collection with clean shapes, but include slight handmade touches” comments Pandolfi. “I find much of my inspiration from the world of geology. Geode, in the Greek language, means shape of the earth. I believe we captured that artisanal, hand-made look to complement what chefs are doing in the kitchen.”
“We wanted to bring something new to the U.S. market in the stoneware category and we began a relationship with Jono —who is a local neighbor to our corporate office in Pine Brook, New Jersey,” states Alexandre Bollengier, VP of Sales & Marketing for Arc Cardinal. “For the past several years, we have been following Jono and his growing presence and popularity. It’s evident in his social media following and customer base the collaboration and passion he has for developing dinnerware exclusively for chefs. New drinkware line offers a refined, high-class allurement for hospitality industry
Elegantly designed for hotels, restaurants and outdoor spaces, Cardinal International Arcoroc® brand’s new Outdoor Perfect Resort drinkware line, made with Eastman Tritan™ copolyester, is now in stock following its debut at the NRA (National Restaurant Association) 2015 show. Cardinal International, based in Pine Brook, New Jersey, is a leading manufacturer and marketer of tabletop products to the North American foodservice market.
