New York best bartender finalist, bar owner, and Spike TV Bar Rescue expert consultant Derrick Turner, traveled to Canada with Arcoroc® to launch new barware collections—Urbane, Skyscraper, and Triborough. Arcoroc, an Arc Cardinal foodservice brand and leading innovator in glassware production, held three launch events in Quebec City, Halifax and Montreal to demonstrate the versatility, style, and value of the newest Arcoroc Made-for-Bartender barware collections.
The launch events, attended by 100+ hospitality professionals, were served by Turner who created eight signature cocktails with on-trend spirits tequila, rum, and whiskey in the newest Arcoroc Triborough and Urbane glasses.
“Glassware can be the forgotten but necessary piece to the cocktail puzzle,” said Turner. “The look, feel, and durability of a glass are incredibly important. A nice weight keeps a glass grounded to the table or bar, and helps a bartender mix – and serve -- cocktails faster for happier customers and higher profits.”
Urbane, Triborough, and Skyscraper -- inspired by the sophistication, high volume, and fast pace of major cities -- are modern workhorses that feature heavy bottoms for fast mixing of cocktails, wide mouths for extra garnish space, and patented ArmoRIM technology, a thermal strengthening process that reinforces glass rims to prevent chipping. Each collection meets the style, feel, and durability demand requested by today’s bartenders.
Turner’s signature cocktails included the 23rd & Park with blanco tequila, blackberries, and mint topped by a torched lemon slice. Red House mixed up reposado tequila with Campari, agave nectar, and freshly squeezed juices. Both were served in Arcoroc Urbane glasses that offer a sleek, curvy design with a subtle indentation near the base to provide superior grip and a ridge inside for stackability, a valuable feature for any busy bar.
The Maarten Flight cocktail featured rum, grapefruit and lime juices, vanilla bean, and a hint of black pepper, while the Rabbit’s Paw combined rum, figs, apple, rosemary, and fennel. Both were served in stackable Arcoroc Triborough glassware, which has a subtle paneled design for style, grip, and light reflection.
Hors d'oeuvres and wine accompanied the cocktail assortment with new Chef & Sommelier® and Arcoroc collections including Sequence and Macaron stemware, Renzo Patina flatware, and Geode, Louison, and Mekkano dinnerware. The tasting menu for the launch events included seared scallops with roasted potatoes, leeks, and braised cabbage; tuna poke bowl; poutine with homemade smoked meats; white chocolate truffle with exotic fruits; and more.

Arcoroc®, an Arc Cardinal brand, is reinventing barware in the hospitality industry with over 80+ new barware items being introduced this month. Raising the bar first and foremost in American-Made Barware with 40+ new SKUs—Triborough, Urbane, Skyscraper and Facets collections—designed and produced in the USA, competitively-priced and rim-tempered for everyday bartender demands. These American-Made collections compliment Arcoroc’s entire new 2017 barware portfolio of stylish glasses, bar tools and unique fully tempered barware designs.
“We're really proud of what our team has accomplished at our USA site," Fred Dohn, CEO North America. "Last year, we announced that we had become the only North American producer of lead-free crystal. This year, we're adding a larger variety of barware to our portfolio showing the world that we can make the best products in the world right here in the U.S. in our own facility—one of the cleanest glassware manufacturing facilities in the world. These new collections are just the start to our mission of reinventing barware with new designs, stronger attributes and made-in-the USA."
Produced on state-of-the-art modern forming lines in Millville, NJ, Arc Cardinal’s new products are extra tough. New ArmoRIM® technology strengthens glass rims to reduce chipping adding up to 5X more resistance at the rim than annealed glass.
“The stackability of Triborough and Urbane keeps the shelves full and solves for ill-equipped or lack of space for supply of glasses at the bar,” says Elliot Mizuki, Bartender at Polite Provisions in San Diego.
The new stackable Arcoroc® Barware collections include shot, rocks, double old-fashioned, hi-ball, beverage and cooler glass styles. All collections feature heavy bottoms for fast mixing of cocktails. Individual collection features include:
• Subtle paneled designs in Triborough glasses refract light and provide excellent grip. 13 SKUs
• Skyscraper is sleek and ready for its social media close-up, with clean lines and a gently tapered base. 12 SKUs
• Urbane has a simple inner horizontal ledge made for stacking and space saving and features heavy base stability with sleek clean lines. 8 SKUs
• Facets brings a diamond cut glass style that combines a modern and classical look. 10 SKUs
“Our new barware collection significantly extends our support for bartenders across all segments of the industry. Those collections have been designed by bartenders for high volume restaurants with the objective of improving their efficiency and the guest experience," says Alexandre Bollengier, Arc Cardinal COO. “And that’s what Arc Cardinal and our brands are all about.”
Adding to the barware reinvention, Arc Cardinal is directly supporting the hospitality industry in upgrading their barware effortlessly to these new designs and stronger materials made in the U.S.A. Trade in non-Arc Cardinal barware for cash back—$1.00 per piece and upgrade to the new Arcoroc® Triborough, Urbane and Skyscraper collections. You can email firstname.lastname@example.org for more details and to start trading in.
All barware collections will be introduced during the National Restaurant Association (NRA) Show beginning May 20-23, 2017 in Chicago, Booth #2201. During the NRA Show 2017, Arc Cardinal will have bartenders showcasing specialty cocktails fit for the modern cocktail scene.

Nostalgia, presentation, portability, and neatness. It’s easy to see why the latest trend in restaurant serveware centers on pieces that fit neatly in your hands. Bowls and jars are being used by chefs and restaurateurs in exciting new ways – and customers everywhere are getting in line.
With more health-conscious diners looking for meals featuring whole grains and vegetables, bowls have become the top choice for easy presentation and practicality. Bowls keep everything in place with little mess. The bowl trend may have started with the popularity of acai and yogurt bowls, yet bowls have long taken center stage in Asian and other global fare, like Korean bibimbap, ramen, and now poke.
International hotel and restaurant consultants Baum and Whiteman released a report claiming bowls would be one of the hottest trends in 2017. So did the website FoodBeast. But it’s not just foodies who are taking notice. In 2016, Business Insider reported entree bowls in restaurants rose nearly 30% over five years, and even The Wall Street Journal declared in a headline: “Bowls are the New Plates.”
In 2017, look forward to new bowl breakout stars, like hearty breakfast/brunch bowls, or even the use of French fries or other starches as the base for creative toppings and sauces.
Arc Cardinal Bowls:
Arcoroc Zen Bowls – Quiet curves and crisp white color add a subtle modern appeal to your food.
Arcoroc Canyon Ridge Bowls – Organic shapes and colors (orange, blue, sand) fit the health-conscious perception.
Arcoroc Season's Bowls – The depth of this bowl is great for layering high and no mess. You can mix and match glass and Zenix material.
Arcoroc Terrastone Bowls – White, sage and blue colored bowls work well with natural ingredients.

Handheld dessert craze is over-the-top, mega-milkshakes that require a handle for extra grip and balance. Usually served in see-through glass jars, these wild and wacky shakes get topped with brownies, cookies, donuts, sprinkles, lollipops, and even cotton candy.
Black Tap Burger Bar in New York City nearly broke the internet when it introduced mile-high milkshakes also known as “freakshake” by consumers. Not to be outdone, Molly Bakes in London serves shakes in large handled glass Mason-type jars piled with cookies, caramel, chocolate and raspberry sauces, marshmallows, and more.
Hotels make luxury kid-friendly breakfast by serving cookies and milk in nostalgic milk jars, but milk and cookies are not only for the kids, it is also a hot wedding trend. Indeed, nothing goes better together than cookies and milk.
Arc Cardinal Jars:
Fresh Take on Jars
The jar trend is not just for super-shakes. Serving food in jars is nostalgic. It gives diners a sense that food is homemade. It’s tactile; food can be picked up and brought closer.
Some new restaurants only serve food in jars, like Ancolie near NYU’s campus in Manhattan. In the Chicago suburbs, a former Oprah Winfrey producer opened a healthy restaurant named for its use of the glass vessels: Jar Bar.
What’s clear is that this craze of bowls and jars is a trend buyers should grab onto.

Elegant and extremely durable, the Sequence Collection of drinkware is the first to be manufactured domestically by Chef & Sommelier® using the incredible new Krysta® material. Arc is proud of its long history bringing innovations to the U.S. market both with materials and design. Krysta®, the latest innovation, is a proprietary lead-free crystal glass that complies with the world’s most challenging specifications of Superior Strength, Complete Transparency, Long-Lasting Brilliance, and Perfect Acoustics. The material has been tested to withstand the rigors of a professional kitchen and maintains complete brilliance even after 2,000 dishwashing cycles. It even boasts the pure, musical sound you’d expect from crystal.
“Our American team is proud to announce that we are upgrading our technical capabilities to produce Krysta® later this year at Arc’s Millville, NJ facility - one of the cleanest glassmaking facilities in the world,” states Bryan O’Rourke, CEO/President of Arc Cardinal. “In fact, Sequence will be the first domestically produced crystal glass collection in the U.S. and we plan to upgrade all Chef & Sommelier® drinkware collections to the new Krysta® material during the balance of 2016 and through 2017.”
A great new material deserves to be showcased with a great new design. Arc teamed up with Rhode Island School of Design graduate James Fryer along with select Arc Cardinal hospitality customers to develop the shape and overall design. The new Sequence Collection delivers the perfect design progression, bringing a modern update to a classical shape made with Krysta®. The Sequence Collection includes 13 SKUs. We have partnered with New York City based ceramic designer, Jono Pandolfi, to develop a new stoneware collection under the Chef & Sommelier® brand.
View New Collection Here
Jono Pandolfi started his ceramic dinnerware business 10 years ago from a small studio in Union City, New Jersey overlooking the stunning views of the New York City skyline. Pandolfi is well-recognized in the design and culinary communities for his high profile collections with notable chefs; especially in the trendsetting capital of New York City.
“My strength is that I listen to chefs and find out what they think is cool and awesome” states Pandolfi. “I like to think about a design like it is a recipe. I use the best materials available, practice it over and over, and eventually you get it right. That is what we have done with this new Geode collection for Chef & Sommelier®.”
We are launching the Geode collection at the 2016 National Restaurant Association show in Chicago. Geode is a stoneware collection that features seven pieces including two bowls, three plates, a ramekin, and a mug.
“My overall guiding principle was to design a collection with clean shapes, but include slight handmade touches” comments Pandolfi. “I find much of my inspiration from the world of geology. Geode, in the Greek language, means shape of the earth. I believe we captured that artisanal, hand-made look to complement what chefs are doing in the kitchen.”
“We wanted to bring something new to the U.S. market in the stoneware category and we began a relationship with Jono —who is a local neighbor to our corporate office in Pine Brook, New Jersey,” states Alexandre Bollengier, VP of Sales & Marketing for Arc Cardinal. “For the past several years, we have been following Jono and his growing presence and popularity. It’s evident in his social media following and customer base the collaboration and passion he has for developing dinnerware exclusively for chefs. Jono expertly listens to chefs and their new ideas on ingredients, cooking, and presentation. He has found a niche for designing custom ceramic dinnerware that has been showcased in restaurants all over the country, including 11 Madison and NOMAD in New York City.”
“Our initial conversation led to a bigger discussion on design and function” comments Bryan O’Rourke, CEO/President of Arc Cardinal. “Our final direction for Jono was simple; capture an earthy, hand-crafted aesthetic to complement the handcrafted artistry of chefs. While working with him, we knew he would bring a completely new dinnerware perspective to our Chef & Sommelier® offerings that match the brands purpose of helping chefs express their creativity. We are very pleased with the results.”
The Geode collaboration is the first between Arc Cardinal and Jono Pandolfi with the intention to expand the Geode collection to include more shapes and sizes as well as develop new designs. To experience the new Chef & Sommelier® Geode collection, visit Arc Cardinal booth #2201 at the 2016 NRA show or online at www.cardinalfoodservice.com.

Arcoroc Tiger Glass collection offers handmade, artisanal style glass in a variety of shapes and colors. Chef & Sommelier® brand announces new shapes for its Cabernet Stemware and an entire new collection devoted to enhanced tasting aptly named Reveal’Up. In celebration of the brands 10 year anniversary and product innovations, Chef & Sommelier® will be a participating sponsor at the upcoming Los Angeles Food & Wine Festival and NYC Food & Wine Festival. To complement the culinary events, Chef & Sommelier® will be premiering its new Reveal’Up and trusted Cabernet stemware first-hand to industry professionals.
Stemware designed specifically for Burgundy and Bordeaux is the latest addition to the variety of restaurant wine glasses in the Cabernet line. These new shapes allow restaurants to elevate their wine service by pouring wines in glasses specifically designed to showcase its characteristics. The wider bowl of the Burgundy glass concentrates aromas of lighter wines and is ideal for Pinot Noir and Chardonnay. The wider straight chimney of the Bordeaux glass allows the acidity of alcohol to reduce and is ideal for Cabernet wine. Both of these new stemware shapes include laser cut sheer rim technology (1.2mm) for optimum wine tasting.
Durability, Brilliance and Clarity. Cabernet Stemware has long been a trusted collection counted on by restaurants to deliver the highest durability and quality — all as a result of the innovative Kwarx® material that is both revolutionary and exclusive to the Chef & Sommelier® brand. The new Burgundy and Bordeaux shapes add an element of refinement, which happily marries with the trend toward customers embracing more premium wines, leading to increased profitability.
There’s nothing more jarring than the crash of breaking glass in a restaurant. For the customer, it’s a conversation stopper. For the restaurateur, it’s the sound of lost profits. That’s why Kwarx® was engineered to be stronger and stay in service longer — minimizing typical breakage episodes. In fact, this material is so superior the glasses are even guaranteed to withstand up to 2,000 industrial dishwashing cycles while remaining brilliant and clear. The colorless materials, sheer rim and flawless seams on the stem make it perfect to the sight, taste and touch of restaurant guests.
And, the Cabernet collection is not just limited to stemware. Newly introduced tumblers and barware line extensions boast the use of Kwarx® material and provide operators with a single, full range solution for all areas of operation.
Collection Debut — Reveal’Up
Reveal’Up is a revolutionary new collection introducing two contemporary shapes—one Intense, the other Soft—specifically crafted to enhance the wine tasting experience. Reveal’Up glasses are available in eight different sizes to meet all restaurant serving requirements.
Chef & Sommelier® ambassador Julia Scavo, ranked 3rd Best Sommelier in the Association de la Sommelier International (ASI) in Europe, kept four key elements in mind when designing the collection: Touch, Sight, Smell and Taste. The glasses feel light in the hand, perfectly balanced, and their laser cut sheer rim (.9mm) is pleasant on the lips. Its lines are aesthetically beautiful and its perfect clarity allows the wine to show its true colors. Scavo designed the Reveal’Up glass to minimize alcohol perception thus enhancing the aroma and taste of the wine. The Intense shape provides an extra-large oxygenation surface — all the better for the wine to breathe. This glass is perfect for the tasting of full bodied, highly tannic reds. The Soft glass, on the other hand, still has a relatively large oxygenation surface but a smaller bowl opening and is intended for the tasting of young, light wines. Both have a 2–4 Oz. gauge to ensure accurate economical pours making them ideal for a wine by the glass programs. Both also offer the largest oxygenation surface in the Chef & Sommelier® wine collection—perfect for tasting young or mature wine varietals, as well as strong and tannic.
Durability is also of utmost importance in the Reveal’Up collection. Its one thing to up the ante on elegance and style but the restaurateur is still concerned about chipping and breakage. Not to worry. Reveal’Up glasses are also made of Kwarx® material and can stand up to the rigors of commercial dishwashing and rough handling with the best of them. Reveal’Up glasses are a perfect complement to elegant table settings and enhance the experience of enjoying fine wines.

New drinkware line offers a refined, high-class allurement for hospitality industry
Elegantly designed for hotels, restaurants and outdoor spaces, Cardinal International Arcoroc® brand’s new Outdoor Perfect Resort drinkware line, made with Eastman Tritan™ copolyester, is now in stock following its debut at the NRA (National Restaurant Association) 2015 show. Cardinal International, based in Pine Brook, New Jersey, is a leading manufacturer and marketer of tabletop products to the North American foodservice market. Brands include Chef & Sommelier®, Arcoroc® and Tiger-glass. The new product line is an expansion of the already-established Arcoroc® Outdoor Perfect line, which is made with SAN plastic. The expanded line offers increased durability, coinciding with a thinner rim — showcasing polished sophistication — and is free of bisphenol A (BPA).
“Outdoor Perfect Resort line made with Eastman Tritan™ copolyester is the next generation of our plastic drinkware, inspired by our favored Chef & Sommelier Cabernet collection and an alternative, higher-end addition to our existing Outdoor Perfect collection,” said Alexandre Bollengier, vice president of sales and marketing at Cardinal International. “The material is very well-crafted and so little resembles plastic.”
Outdoor bar spaces are increasingly elevating dining experiences for their patrons, and with hotel poolside glassware restrictions, the new product line fills a much-needed void. Western and Southern states’ outdoor bars and restaurants remain in full-swing operation during fall and winter months, and with Northern “snowbirds” heading south for the winter, timing is perfect for this product line expansion.
Cardinal decided to work with Eastman on account of the company’s technical expertise in shatter, impact and stain resistance, as well as the clarity of Eastman Tritan™ copolyester following thousands of dishwashing cycles — including those in commercial dishwashers.
The Outdoor Perfect Resort product line made with Eastman Tritan™ copolyester will include the following listed items, all of which are essential shapes needed for outdoor spaces.
Arcoroc® Outdoor Perfect Resort Drinkware, Made With Eastman Tritan™ Copolyester, Provides Sleek, Sophisticated Design for Hospitality Industry, p.2
“With high demand from the hotel industry, we are confident the Outdoor Perfect Resort collection will be a success,” said Bryan O’Rourke, CEO and president at Cardinal International. “Hotels carrying the Cabernet collection can now carry the same drinkware shapes and dishwashing racks for Outdoor Perfect Resort, with equivalent trust, clarity and durability.”
“With the launch of the expanded Outdoor Perfect Resort line, Cardinal is meeting the hospitality industry’s needs by providing a high-end beverageware option that can be used year-round both indoors and outdoors,” said Marty Boykin, Ph.D., director of consumer durables and the Tritan platform at Eastman Chemical Company. “In turn, Eastman is committed to helping Cardinal fill this demand by providing a quality material with Eastman TritanTM copolyester and ongoing technical support.”
